Ingredients:
- 1 medium-sized pumpkin (peeled and cubed)
- 2 tablespoons olive oil
- 1 large onion (chopped)
- 3 cloves garlic (minced)
- 4 cups vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- Optional: pumpkin seeds for garnishPreheat your oven to 400°F (200°C). Place the cubed pumpkin on a baking sheet, drizzle with 1 tablespoon olive oil, and roast for 25-30 minutes until tender.
While the pumpkin roasts, heat the remaining olive oil in a large pot over medium heat. Add the chopped onion and minced garlic. Sauté until the onion becomes translucent.
Add the roasted pumpkin to the pot along with the vegetable broth. Bring to a simmer and cook for 10 minutes, allowing the flavors to meld.
