  1. Ingredients:
    - 500g mixed seafood (shrimp, mussels, and squid)
    - 300g paella rice
    - 1 large onion, finely chopped
    - 2 garlic cloves, minced
    - 1 red bell pepper, sliced
    - 400g canned diced tomatoes
    - 1 liter fish or vegetable broth
    - 1 tsp saffron threads
    - 1 tsp smoked paprika
    - Salt and pepper to taste
    - Olive oil
    - Fresh parsley, chopped (for garnish)
    - Lemon wedges (for serving)

  2. Heat olive oil in a large skillet or paella pan. Add the chopped onion and garlic, sautéing until they are soft and translucent.

  4. Add the sliced red bell pepper and cook for a few minutes until tender.

  5. Stir in the paella rice, ensuring it's well-coated in the oil and veggie mix. Cook for 2-3 minutes.

  7. Pour in the broth, season with salt and pepper, and bring to a simmer. Let it cook uncovered, on low heat, for about 15-20 minutes.

  8. Add the mixed seafood, gently placing it into the rice without stirring too much. Let it cook for another 10-15 minutes, or until the seafood is fully cooked.

  9. Remove from heat. Garnish with fresh parsley and serve with lemon wedges on the side.
