Ingredients: - 1 package phyllo dough, thawed - 300g fresh spinach, washed and chopped - 200g feta cheese, crumbled - 2 eggs, beaten - 1 onion, finely chopped - 2 cloves garlic, minced - 2 tbsp olive oil - Salt and pepper to taste - 1 tsp dried dill
Preheat your oven to 180°C (350°F).
In a large skillet, heat the olive oil over medium heat. Add onions and garlic, sauté until translucent.
Add the spinach to the skillet and cook until it wilts. Remove from heat and let it cool slightly.
In a large bowl, mix the cooled spinach mixture with feta cheese, eggs, dill, salt, and pepper.
Carefully unroll the phyllo dough. Cover the sheets with a damp cloth to keep them from drying out.
Grease a baking dish and lay a sheet of phyllo in the bottom. Brush it lightly with olive oil, then layer another sheet on top, brush with oil, and repeat the process until you have used about half the phyllo.
Spread the spinach and feta mixture evenly over the phyllo base.
Continue layering the remaining phyllo sheets on top of the filling, oiling each sheet as before.
Tuck the edges of the phyllo sheets into the sides of the dish to seal the pie.
Bake in the preheated oven for about 30-35 minutes, or until the phyllo is golden and crispy.
Let it cool for a few minutes before slicing. Serve warm and enjoy!
