Ingredients:
- 400g spaghetti
- 150g pancetta or guanciale, diced
- 2 large eggs
- 1 cup freshly grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and black pepper to tasteCook the spaghetti according to the package instructions until al dente. Reserve 1 cup of pasta water and drain the rest.
While the pasta is cooking, heat a large skillet over medium heat. Add the pancetta or guanciale and cook until it's crispy, about 3-4 minutes. Add the minced garlic and sauté for an additional minute.
In a bowl, whisk together the eggs, grated Parmesan, and a generous pinch of black pepper until well combined.
Add the drained spaghetti to the skillet with the pancetta and garlic. Toss to combine and remove from heat.
Quickly pour the egg and cheese mixture into the pasta, stirring vigorously. The residual heat will cook the eggs and melt the cheese, creating a creamy sauce. If the sauce is too thick, add a bit of the reserved pasta water to reach your desired consistency.
Season with salt and pepper to taste. Serve immediately, garnished with extra Parmesan and a sprinkle of freshly ground black pepper.
