Ingredients:
- 1 cup of rice
- 2 cups of water
- 1 can (14 oz) of diced tomatoes
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 teaspoon of olive oil
- Salt and pepper to taste
- Fresh herbs (like basil or parsley), chopped for garnishRinse the rice under cold water until the water runs clear.
In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until they are soft and translucent.
Add the rinsed rice to the saucepan, stirring it around with the onions and garlic, letting it toast slightly for about 2 minutes.
Pour in the diced tomatoes along with their juice and the 2 cups of water. Bring the mixture to a boil.
Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 18 minutes, or until the rice is cooked and the liquid is absorbed.
Remove from heat and let it sit, covered, for 5 minutes to allow the flavors to meld.
Fluff the rice with a fork, season with salt and pepper to taste, and garnish with freshly chopped herbs before serving.
