Preheat your oven to 375°F (190°C).
In a frying pan, heat olive oil over medium heat. Add garlic, mushrooms, and spinach. Cook until the spinach is wilted and mushrooms are soft.
Remove from heat and stir in cream cheese, Parmesan, thyme, and rosemary. Season with salt and pepper.
Carefully cut a pocket into each chicken breast. Stuff each with the spinach and mushroom mixture.
Secure the openings with toothpicks. Place the stuffed chicken breasts in a baking dish.
Bake in the preheated oven for 25-30 minutes or until the chicken is thoroughly cooked and juices run clear.
Serve hot, garnished with additional Parmesan if desired.
