  1. Ingredients: Rice noodles, tamarind paste, fish sauce, palm sugar, eggs, firm tofu, garlic, shallots, dried shrimp, roasted peanuts, fresh bean sprouts, lime wedges, chives or green onions, red chili pepper, vegetable oil.

  2. Soak the rice noodles in warm water for about 20-30 minutes until they are soft but still firm to the touch. Drain and set aside.

  4. In a small bowl, mix together tamarind paste, fish sauce, and palm sugar to create the Pad Thai sauce. Adjust the balance of flavors according to your taste.

  5. Heat oil in a large pan over medium-high heat. Add chopped garlic, shallots, dried shrimp, and chopped firm tofu. Sauté until they start to brown.

  6. Push the sautéed ingredients to one side of the pan, crack the eggs into the pan and scramble until just set.

  7. Add the drained noodles to the pan. Pour the prepared Pad Thai sauce over the noodles and toss everything together until the noodles are well coated and heated through.

  8. Add half of the bean sprouts, half of the peanuts, chopped chives, and slices of red chili pepper. Mix thoroughly.

  9. Serve the Pad Thai hot, garnished with the remaining bean sprouts, peanuts, fresh lime wedges, and extra red chili pepper if desired.
