Ingredients: - 4 large bell peppers (any color) - 1 lb ground turkey - 1 cup cauliflower rice - 1 small onion, chopped - 2 cloves garlic, minced - 1 cup chopped tomatoes - 1/4 cup chopped fresh parsley - 1 tsp dried oregano - Salt and pepper to taste - 1/2 cup shredded cheese (optional)
Preheat the oven to 375°F (190°C).
Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
Heat a skillet over medium heat. Add the ground turkey and cook until browned. Drain any excess fat.
Add the chopped onion and minced garlic to the skillet with the turkey. Cook until the onion is translucent.
Stir in the cauliflower rice, chopped tomatoes, parsley, oregano, salt, and pepper. Cook for an additional 5 minutes.
Stuff the hollowed-out bell peppers with the turkey and cauliflower mixture.
Place the stuffed peppers in a baking dish and cover with foil. Bake in the preheated oven for 30 minutes.
Remove the foil, top each pepper with shredded cheese if using, and bake for another 10 minutes or until the cheese is melted and bubbly.
