Ingredients:
- 200g dark chocolate
- 175g unsalted butter, softened
- 350g caster sugar
- 6 eggs, separated
- 200g all-purpose flour
- 50g cocoa powder
- 1 tbsp baking powder
- 400g canned cherries, drained
- 500ml heavy cream
- 3 tbsp confectioners' sugarPreheat your oven to 180°C (350°F). Grease and flour two 9-inch round cake pans.
Melt the dark chocolate and let it cool slightly.
Cream the butter and caster sugar together until fluffy. Beat in the egg yolks one at a time.
Stir in the melted chocolate.
Sift the flour, cocoa powder, and baking powder together and fold into the chocolate mixture.
In a separate bowl, beat the egg whites to stiff peaks and gently fold into the batter.
Divide the batter evenly between the prepared pans and bake for about 25-30 minutes. Allow to cool.
Whip the heavy cream with confectioners' sugar until it forms stiff peaks.
Assemble the cake by placing one layer on a plate, top with half the cherries and then half the whipped cream. Place the second layer on top and repeat.
