  1. Ingredients:
    - 200g dark chocolate
    - 175g unsalted butter, softened
    - 350g caster sugar
    - 6 eggs, separated
    - 200g all-purpose flour
    - 50g cocoa powder
    - 1 tbsp baking powder
    - 400g canned cherries, drained
    - 500ml heavy cream
    - 3 tbsp confectioners' sugar

  2. Preheat your oven to 180°C (350°F). Grease and flour two 9-inch round cake pans.

  4. Melt the dark chocolate and let it cool slightly.

  5. Cream the butter and caster sugar together until fluffy. Beat in the egg yolks one at a time.

  6. Stir in the melted chocolate.

  7. Sift the flour, cocoa powder, and baking powder together and fold into the chocolate mixture.

  8. In a separate bowl, beat the egg whites to stiff peaks and gently fold into the batter.

  9. Divide the batter evenly between the prepared pans and bake for about 25-30 minutes. Allow to cool.

  10. Whip the heavy cream with confectioners' sugar until it forms stiff peaks.

  11. Assemble the cake by placing one layer on a plate, top with half the cherries and then half the whipped cream. Place the second layer on top and repeat.
