Ingredients:
- 1 can of chickpeas, rinsed and drained
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/2 red onion, thinly sliced
- 1/2 cup of cherry tomatoes, halved
- 1/4 cup of chopped fresh parsley
- 1/4 cup of feta cheese, crumbled
- 1/4 cup of Kalamata olives, halved
- 3 tablespoons of olive oil
- 2 tablespoons of lemon juice
- 1 clove of garlic, minced
- Salt and pepper to tasteIn a large mixing bowl, combine the chickpeas, cucumber, red bell pepper, red onion, cherry tomatoes, parsley, feta cheese, and Kalamata olives.
