  1. Ingredients:
    - 4 large russet potatoes, washed and poked with a fork
    - 4 tbsp of olive oil
    - Salt and pepper to taste
    - 2 tsp of garlic powder
    - 1 cup of shredded cheddar cheese
    - 1/2 cup of sour cream
    - 4 green onions, chopped
    - 1/4 cup of crispy bacon bits (optional)

  2. Preheat your oven to 400°F (200°C).

  4. Rub each potato with olive oil and sprinkle generously with salt, pepper, and garlic powder.

  5. Place the potatoes on a baking sheet and bake for about 50-60 minutes, or until they are cooked through and the skins are crispy.

  6. Remove the potatoes from the oven, and let them cool slightly. Once cool enough to handle, cut a slit on the top of each potato and gently squeeze the sides to open them up.

  7. Fluff the inside of each potato with a fork, then top with shredded cheese, sour cream, chopped green onions, and bacon bits if using.

  8. Return the potatoes to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.

  9. Serve hot, and enjoy the creamy, cheesy goodness inside these hearty baked potatoes!
